    South Dakota Cabbage w Bacon and Cheese

    1/2 lb Bacon
    1/4 c Bacon fat
    1/4 c All purpose flour
    2 c Milk
    1/4 lb Cheddar cheese, shredded
    Salt and pepper
    1 md Head cabbage, cut into
    -wedges
    Croutons

    Recipe



    Cook bacon, drain, and keep warm. Prepare a white sauce with bacon
    fat, flour and milk. When thickened, stir in cheese and add salt and
    pepper to taste. Cook cabbage in small amount of boiling salted
    water until tender, about 7 minutes. Drain and put on hot platter.
    Top with cheese sauce and garnish with bacon. Sprinkle with
    croutons. Makes 4 servings.
    Suggested yield: 4 Servings
