    2 Cups cooked mashed yellow squash
    2 large eggs
    1 small red onion chopped
    1/4 tsp salt
    1/4 tsp ground red pepper 1 clove garlic...mashed
    1 to 2 Tbsp fresh cilantro
    1/2 cup buttery cracker crumbs
    1 jalapeno (seeded & chopped)
    Vegetable oil

    Recipe



    Combine all ingredients except oil in food processor and blend until smooth.
    Stop to scrape down sides. Pour oil 2 inches deep in dutch oven, heat to 375 deg.
    Drop by tablespoons in hot oil in batches. 1 minute on each side or until golden
    brown. Drain on paper towels. Serve immediately with Cilantro Pesto or Grilled
    Red Pepper Sauce.


    Cilantro Pesto

    2 cups fresh cilantro leaves
    2 to 3 cloves garlic
    2 Tbsp fresh lime juice
    salt and pepper to taste
    3 to 4 Tbsp olive oil

    Add everything except oil to food processor or blender.
    Drizzle oil in slowly, until well blended.


    Grilled Red Pepper Sauce

    2 red peppers
    1 Tbsp butter
    2 cloves garlic (minced)
    1/4 cup dry white wine
    1/4 tsp salt and pepper

    Grill or roast peppers, seal in plastic bag 10 minutes, remove skin
    and seeds, chop peppers. In a skillet add grilled pepper, garlic,
    and butter. Cook until garlic is tender. Stir in wine, salt, and pepper
    Reduce liquid by half then process in blender until smooth.
