Stewed Okra and Tomatoes

List of Ingredients
1/4 pound bacon, diced
1/2 cup water
1 cup yellow onion, diced
1/2 teaspoon Tabasco Sauce
2 cups tomatoes, diced
1/2 teaspoon salt
1/2 pound frozen cut okra
2 teaspoons black pepper
2 cups tomato sauce
1–2 cups corn kernels (optional)
Recipe
Sauté diced bacon, add onion, and continue cooking. Add all other ingredients and bring to a boil.Reduce to a simmer and stew, stirring occasionally, for 45 minutes or until okra is tender. Makes 10 big servings.
When I make myself a Three, Four, or Five Vegetable Plate at the restaurant,I use several criteria in the selection process. Color is one. I classify our Stewed Okra,the Creole Cabbage and the Cajun-Italian Eggplant as red dishes. You’ve gotta see ’em to believe ’em. They’re gorgeous!
