The Big Potato

4 large baked potatoes *
2 tbsp. butter or margarine
1/2 lb. Hillshire Farm® Smoked Sausage (any variety), diced
1 cup green pepper, diced
1 medium onion, diced
1/2 cup sour cream or light sour cream
1/3 cup milk
1/2 tsp. salt
1/2 tsp. ground black pepper
1 cup shredded Cheddar cheese
1/4 cup chopped fresh chivesRecipe
1. Preheat oven to 375ºF. Slice potatoes in half lengthwise. Scoop pulp out of each potato, leaving a 1/4-inch-thick shell. 2. Melt butter in a 10-inch skillet. Cook sausage, green pepper and onion in hot butter until vegetables are tender. 3. Mash potato pulp, sour cream, milk, salt and black pepper in a large bowl until smooth. Stir in sausage mixture, cheese and chives. Spoon mashed potato mixture into the potato shells. Place on a large cookie sheet. Bake for 30 minutes or until potatoes are heated through.
*Note: To bake potatoes, preheat oven to 425°F. Scrub potatoes thoroughly with a brush; pat dry. Prick potatoes with a fork. Bake for 1 hour or until tender. Cool potatoes to room temperature. (Store in the refrigerator for up to 24 hours before using.)
