Vegetable Cous Cous

List of Ingredients
1 lb. Israeli cous cous
1 small onion, diced
4 garlic cloves
1 tsp. saffron
2 qts. chicken stock
1 yellow zucchini, diced
1 green zucchini, diced
1 carrot, diced
2 tomatoes, diced
1/2 lb. string beans
6 oz. butter
4 oz. almonds
4 oz. raisins
6 oz. sugar
Cayenne pepper (to taste)
Coriander (to taste)
Cinnamon (to taste)

# Sauté onions, garlic and saffron in olive oil.
# Add cous cous and chicken stock.
# Cook until cous cous pearls are semi soft.
# Strain and reserve broth.
# Blanch vegetables and shock in an ice bath to retain color.
# Sauté with butter and spices.
# Add cous cous and 1/6 cup of the reserved broth.
# Combine sugar, cayenne, almonds and raisins and caramelize over medium heat (10 minutes).
# Use almonds and raisins to garnish and serve.
Serves 6.
