Recipe Introduction
Mum used to call them 'Dancin Dollies", never firgured out where she came up with that.
List of Ingredients
1 egg
4 heaped tablespoons of plain flour
10 fl. oz of milk
a splash of water (important according to Grandma)
pinch of salt
seasoning, such as pepperor mixed herbs, to your taste
vegetable oil
Take a large roasting tin and coat the bottom of it with a liberal quantity of oil (about 3-4 tablespoons). Place this in a preheated oven at maximum temperature (ie. Gas 9/275° F or thereabouts) and allow the oil to heat for 10 minutes or until you hear the oil spitting.
Meanwhile, place the flour, egg, seasoning and half of the milk into a mixing basin. Mix these until a smooth batter mixture is achieved. Add milk until the mixture is thin enough to pour easily but not too thin. Mix in the splash of water.
When the oil is hot pour enough of the batter into the tin to cover all of the bottom of it. Place this in the oven and cook for around 20 minutes. The pudding is ready once it is brown in the middle and the edges have risen and become crispy.
