"Stuffed" Mashed Potatoes ala Popeyes

List of Ingredients
2 large Portabella mushrooms, sliced 3/4 in. thick
2 med. onions, Vidallia or Texas Sweet, also sliced 3/4 in. thick
3 large peppers, any color-red, green, yellow or mix it up- sliced thick
2 fresh fish fillets, such as Mississippi Farm Raised Catfish.
1 jar of your favorite Italian salad dressing
Recipe
1. Pick up some extra Popeyes mashed potatoes (tell them to hold the Cajun Gravy).
2. Marinate some sliced onions, sliced peppers (red or green) and some sliced Portabella mushrooms.
3. Marinate Catfish filets in the refrigerator for at least 2 hours. After marinating, place the catfish filets in a glass casserole dish, or plastic container, do not use an aluminum pan.
4. On a medium heat grill, cook the catfish filets on a bed of aluminum foil, while the vegetables are on the grill. The onions, peppers, and mushrooms should be grilling with a great deal of sizzle and some smoke. The veggies will begin to caramelize, giving them great color.
5. Use a spatula to place the grilled veggies over the catfish filets. Then, close the lid and cook the fish until flaky with a fork.
6. Make sure that the mashed potatoes are hot, i.e. 165 degrees Fahrenheit. In the microwave, spoon the potatoes in a heaping mound on your platter and place the fish filets and grilled vegetables on top of them. Now you're really cookin' - dig in and enjoy!
