    'Toss Sweep' Chicken Caesar Salad

    List of Ingredients




    * 1 head romaine lettuce – washed, dried and cut into bite size pieces
    * 1 1/2 cups Mrs. Cubbison’s® Caesar Salad Restaurant Style Croutons
    * 1/4 cup freshly grated Parmesan cheese
    * 2 boneless, skinless chicken breasts
    * olive oil as needed
    * salt, pepper & chili powder as needed

    Dressing

    * 1 tablespoon anchovy paste or 6 anchovy fillets pressed into a paste
    * 4 cloves minced garlic
    * 1 large egg – drop in boiling water for exactly 1 minute and use immediately
    * 1/2 cup olive oil
    * juice of 1/2 lemon
    * 1/2 teaspoon Worcestershire sauce
    * 2 teaspoons Dijon mustard
    * 1/8 teaspoon salt
    * 1/4 teaspoon black pepper

    Recipe



    # Preheat your barbecue grill to medium. Rub both sides of the chicken breasts lightly with olive oil and sprinkle lightly on both sides with salt, pepper & chili powder. Place the chicken on the grill and cook on both sides until thoroughly cooked, but not dried out.
    # Remove the cooked chicken from the grill and let cool. Slice the cooled breasts, place in a zipper-lock bag or plastic container and keep refrigerated until needed. Note: you can do steps 1 and 2 in advance of salad preparation.
    # In a bowl, mix together the anchovy and garlic, whip in the egg and slowly add the olive oil. It should start to look like a light mayonnaise.
    # Squeeze in the lemon juice, Worcestershire sauce, mustard, salt & pepper and blend together. This can also be done in a blender. Store in the refrigerator or cooler until needed.
    # Right before you serve your salad, place the cut romaine lettuce in a bowl and toss with 1 cup of croutons and Parmesan cheese. Add the prepared dressing and toss. Top with sliced chicken and remaining croutons. Enjoy!
