    For the bread:

    2 (.25 ounce) packages active dry yeast

    1/4 cup warm water (110 F)

    11/2 cups buttermilk

    1/2 cup vegetable oil

    41/2 cups flour

    1 teaspoon salt

    1/2 teaspoon baking soda

    For the filling:

    1/2 cup butter, melted

    11/4 cups brown sugar

    2 teaspoons ground cinnamon

    1/2 teaspoon vanilla

    1/2 cup apple pie filling, chopped

    For the topping:

    1/4 cup butter, melted

    1/4 cup granulated sugar

    1 teaspoon ground cinnamon

    In a large bowl, dissolve yeast in warm water. Let stand until creamy,
    about 10 minutes. In a small saucepan, heat buttermilk until warm to
    touch. Pour buttermilk and oil into yeast mixture; mix well. Combine
    flour, salt and baking soda. Stir flour mixture into buttermilk mixture,
    1 cup at a time, until soft dough forms. Turn dough onto lightly floured
    surface and knead 20 times. Cover, let rest for 15 minutes and roll out
    dough into large rectangle. In small bowl, stir together butter, brown
    sugar, cinnamon and vanilla. Spread mixture over dough; add apple
    filling bits. Roll dough into a log and coat the top of the log with
    melted butter. Mix sugar and cinnamon and dust log with mixture. Cover
    and let rise 30 minutes. Preheat oven to 400 degrees F. Bake bread for
    20 to 25 minutes, until golden brown. Let stand 2 to 3 minutes before
    slicing and serving.
