Al Davis Sucks Jumbalaya

Recipe Introduction
Mmmmmm. There ain't much that beats a good jumbalaya and this is a corker. Make sure you've got a pot big enough though. This will feed at least 8 folks and leftovers. Don't know why the cider is in there but it was close at hand when I was cooking and it seemed in the tradition of cajun cooking. A culinary and fiery collection of odds and sods, just like the Raiders.
List of Ingredients
2 Chicken breasts
1/2 a smoked lean sausage (I use turkey, pork, beef mix)
1/2 pound of cubed ham
1/2 pound of shrimp
1 Big old onion
6 Okra
1 Yellow bell pepper
1 Green bell pepper
6 Sticks of celerey
3 Garlic cloves chopped.
2 10oz cans of chopped tomatoes
2 Tablespoons of cumin
2 Bay leaves
Salt and pepper
10 cups of chicken stock
4 cups of rice
1/2 bottle of Louisiana or Cajun hot sauce
1/2 a bottle of cider
Recipe
Step 1: Heat oil in the pan and cook the sausage, and remove, cook the ham and remove, cook the chicken and remove.
Step 2: With oil left in pan sautee the chopped onion, okra, celery, and peppers. 10-15 minutes.
Step 3: Add the tomatoes, cumin and garlic and simmer 10-15 minutes. Add salt and pepper to taste.
Step 4: Add the ham, hot sauce, bay leaves, cider, and chicken stock and simmer 10-15 minutes.
Step 5: Add the sausage, chicke, and shrimp and rice and continue to cook until rice is ready.
Step 6: Enjoy, I like to serve it with garlic bread on the side.
