"A fun appetizer. The recipe comes from my mother-in-law."
List of Ingredients
2 6-ounce jars marinated artichoke hearts
1/2 teaspoon salt
1 medium onion, chopped
1/2 teaspoon oregano
1 garlic clove, chopped
2 tablespoons parsley
4 eggs, beaten
1/2 cup cracker or bread crumbs
1/2 teaspoon pepper
1/2 pound cheddar cheese, gratedRecipe
Preheat oven to 350-degrees. Drain artichoke hearts; save juice. Chop. In a frying pan saute onion and garlic in juice from artichokes. In a bowl, mix eggs, pepper, salt, oregano, parsley, cracker crumbs and cheese. Add onion/garlic mixture. Put batter in a 7x11 inch greased baking pan. Bake for 30 minutes. Cut into small squares. Let stand for 10 minutes and serve. Serves 8.
