3 tablespoons oil
1 cup chopped Spanish onions
2 ribs celery, chopped
1/3 cup chopped red bell peppers
3/4 cup plus 2 tablespoons ketchup
3/4 cup plus 2 tablespoons half-and-half
1 tablespoon kosher salt
1 teaspoon fresh-ground black pepper
3/4 teaspoon garlic powder
3/4 teapsoon cayenne pepper
3/4 teaspoon ground cumin
1 cup uncooked oatmeal
11/2 pounds ground pork
13/4 pounds ground beef
2 large eggs
12 slices bacon
Recipe
In a skillet over medium heat, heat oil. Add onions, celery and bell peppers and cook 5 minutes until soft. Place vegetables in a food processor fitted with metal blade. Add ketchup, half-and-half, salt, pepper, garlic powder, cayenne, cumin and oatmeal and process until finely chopped. Place in a mixing bowl with pork, beef and eggs. With clean hands, mix completely.
Form meat mixture into a loaf and place in a baking dish that is at least 9 by 13 inches. Lay strips of bacon over loaf. Bake in a 350-degree oven 11/2 hours or until a thermometer registers 155 degrees. You may have to periodically and carefully drain fat from pan if it gets deeper than 1/2 inch. Slice into meal-size servings or cut slices into tasting-size portions. Makes 12 slices for a meal or 60 tasting-size portions.
