Dan Marino's Spinach & Three Cheese Dip

List of Ingredients
11/2 tablespoons butter, melted
3 tablespoons flour
11/2 cups half-and-half
1/4 teaspoon kosher salt
1 tablespoon Tabasco sauce
1/2 cup plus 2 tablespoons grated parmesan cheese
1 (10-ounce) box frozen chopped spinach, thawed and squeezed in a towel to remove excess moisture
4 ounces or 1 cup shredded mozzarella cheese
4 ounces or 1 cup shredded cheddar cheese
1/4 cup diced red onions, for garnish
3 tablespoons sour cream, for garnish
3 strips bacon, cooked crisp and crumbled, for garnish
Recipe
In a heavy saucepan, combine butter and flour and cook over medium heat, stirring frequently, until light golden brown. Add half-and-half, salt and Tabasco. Bring to a boil and cook, stirring frequently, until thickened. Slowy whisk in parmesan cheese. (Can be made ahead to this point and refrigerated overnight.) Mix in well-drained spinach. Place in a gratin dish or 9-inch pie pan. Top with mozzarella and cheddar cheeses. Place in microwave and cook on high 4 to 5 minutes until cheese is melted (if reheating, heat until dip is heated through). Garnish with red onions, sour cream and bacon. Makes 6 cups.
