The perfect side dish to serve along with Feasty "Gridiron" Chili! Plus, it's easy to make and uses a number of the same ingredients required for the chili....


List of Ingredients




2 boxes Corn Bread Mix
1 cup Corn
2 Eggs
1 cup Green Bell Pepper(chopped)
1 cup Onion, (chopped)
1 cup Shredded Cheddar Cheese
Crushed Red Pepper (Optional)

Once again, this recipe is best when prepared using a large cast iron skillet... However, if cast iron isn't available, use a Pyrex dish, cake pan, whatever.... This bread is still going to rock! Preheat oven and prepare corn bread mixture as outlined on box. In the mean time, generously grease skillet and insert either in oven to warm during cornbread batter preparation. Once cornbread batter is mixed, incorporate chopped green pepper, chopped onion and corn into the batter. Remove hot skillet from oven and pour batter into skillet. Return to oven and bake as per cornbread instructions. Once cornbread has finished baking, remove from oven and top with shredded cheddar cheese. Allow to cool and slice/serve directly from skillet......
