    1 large loaf Italian bread*
    HEBREW NATIONAL® Deli Mustard
    1 tablespoon vegetable oil
    2/3 cup chopped onion
    1/3 cup chopped seeded red bell pepper
    1/3 cup chopped seeded green bell pepper
    1 (12-ounce) HEBREW NATIONAL® Beef Salami or Lean Beef Salami Chub, diced
    8 eggs, beaten or 1-1/2 cups cholesterol-free egg substitute
    Salt
    Freshly ground black pepper

    *Or, substitute 6 hoagie rolls for Italian bread loaf. Prepare and fill as directed for Italian bread loaf. Wrap each filled hoagie individually in aluminum foil; bake about 15 minutes or until heated through.

    Preheat oven to 350°F. Slice bread in half lengthwise. Remove soft bread center; reserve for another use. Spread mustard evenly inside bread shells.

    Heat oil in large nonstick skillet over medium heat. Add onion; cook 4 minutes. Add bell peppers; cook 4 minutes or until peppers are tender, stirring occasionally. Add salami; cook until heated through. Add eggs; increase heat to medium-high. Cook, stirring until eggs are set. Season with salt and pepper to taste.

    Fill bread shells with salami mixture. Close sandwich; wrap tightly in aluminum foil. Bake 20 minutes or until heated through. Cut sandwich crosswise into 6 slices.

    Serves 6.
