Gameday Stuffing with Sausage and Pepper

List of Ingredients
12 cups diced bread, allowed to stale overnight.
¼ cup olive oil
1 yellow onion, small dice
2 sweet bell peppers, small dice
1 large carrot, small dice
2 celery ribs, small dice
1 garlic clove, smashed
½ lb. Fresh Italian sausage (hot or sweet) removed from its casing
1 tsp. fresh oregano leaves
2 Tbsp. fresh parsley, chopped
4 cups good chicken broth heated with ½ stick butter melted into it.
Kosher salt and fresh ground black pepper to taste Recipe
Place the olive oil in a large skillet and heat until barely smoking.
Crumble the sausage into the pan and cook, stirring and breaking up the sausage, until well browned. Remove from pan.
In the remaining fat, sauté all the veggies including the garlic until softened and fragrant (about 6 min)
Toss the veggies in with the bread. Add the herbs and the cooked sausage. Mix well.
Moisten the mixture with the chicken stock/butter until it is well moistened, but not soggy. (you may not need all of it)
Place the stuffing in a well-buttered casserole dish and cook in a preheated 400-degree oven until it is well-browned on top and piping hot.
