1 boneless turkey breast
1 cup breadcrumbs
1 egg
1 tsp. fresh thyme
1 tsp. fresh rosemary
2 Tbsp. fresh parsley
2 tbsp. olive oil
Kosher salt and freshly ground black pepper to taste

Recipe
Remove the tenders from the breast and cut into 1-inch pieces. Place in a food processor
Carefully peel back the skin from the meat using a small sharp knife and your hands.
Totally separate the meat from the skin and reserve the skin.
Place the breadcrumbs, eggs, herbs and salt and pepper in the food processor with the tenders and pulse until the texture resembles ground beef.
Spread the turkey/breadcrumb mix on one side of the breast and place the other side of the breast on top with the thicker end over the thinner end of the bottom side.
Place the sheet of skin over the turkey and tuck it under the breast, completely covering the meat.
Place the turkey in an ovenproof pan and surround the meat with aluminum foil to help the meat keep its shape. Drizzle the olive oil over the turkey and season with salt and pepper.
Place in a preheated 350 oven and bake for 1½ hrs or until the internal temp is 165.
Remove from the oven and let rest for 15 min.
Garnish with chive pieces to simulate the stitching on a football
