    List of Ingredients




    * 6 mild Italian sausages

    * 2 Tbs unsalted butter

    * 1 medium onion, chopped

    * 1½ tsp red pepper flakes

    * 2 cans whole Italian plum tomatoes (1 lb each), juice included

    * 1 cup vodka

    * 1 cup whipping cream

    * 1 Tbs tomato paste

    * 1 lb penne pasta

    * 1 cup parmesan cheese

    * fresh oregano, chopped (to taste)

    * *as with any recipe, if you do not like vodka you can replace with white wine. If you opt not to use alcohol at all you can replace with clear chicken broth or flavor or your choice that suits recipe

    Recipe



    1. Bring water to a boil in a large pot. Add the sausages and cook for 10 minutes. Remove from the pot and cool. Discard water.

    2. Melt the butter in a large saute pan over medium heat. Add the onions and red pepper flakes and cook until onions are soft.

    Add the tomatoes, reduce heat and simmer for 1 hour.

    3. Cut the sausages into bite-size pieces, then add with vodka to saute pan--simmer for 10-15 minutes. Turn heat to high and add

    the cream and tomato paste. Stir and cook for 10-15 minutes.

    4. Boil the pasta in a large pot, following cooking directions on package.

    5. Drain the pasta and put in a large serving bowl. Add the tomato-sausage mixture and sprinkle with parmesan cheese and fresh oregano.
