4 ounces sliced pepperoni, chopped
1/2 cup Italian-seasoned tomato paste
1 1/2 cups shredded mozzarella cheese
1 1/2 teaspoons olive oil
2 (10-count) cans refrigerated biscuits
Vegetable oil, for frying
Grated Parmesan cheese
Recipe
In a medium bowl, mix together pepperoni, tomato paste, mozzarella and olive oil. Roll or press each biscuit into a 5-inch circle. (They might be hard to roll thin, but don't give up until they're about the right size.) Place about 1 tablespoon of the meat mixture in center of each flattened biscuit. Fold in half and pinch dough very firmly to seal; set aside until all bundles are finished. Make sure seals
are secure.
In a large skillet, heat about 1 inch vegetable oil to 325 degrees. Fry "footballs," a few at a time, until golden brown and dough is cooked through, about 2 minutes on each side. Drain on paper towels; sprinkle with Parmesan.
Yield: 20 snacks.
Note: If you have trouble with the seams popping open, lower bundles into the oil using tongs to lightly hold the sides together. The biscuits puff up quickly but stop expanding after a few seconds.
