Quarterback Shrimp Dijon

1 pound of raw large shrimp or prawns
Marinade
¼ cup prepared Dijon mustard
2 Tablespoons water
2 tablespoons brown sugar
2 tablespoons prepared horseradish
1 tablespoon white wine vinegar
1 ½ teaspoon olive oil
1 teaspoon salt
1 tablespoon chopped garlic
1 tablespoon chopped parsley
1 tablespoon chopped green onion
Recipe
Shell shrimp, leaving tails intact. Remove spinal vein with the point of a sharp knife. In a glass or ceramic bowl, combine marinade ingredients. Add shrimp and toss. Cover with plastic wrap and chill for several hours.
Drain shrimp, reserving marinade. Place shrimp on well oiled grill over medium hot coals. Grill for 6 minutes. Turn, then baste twice with reserved marinade and cook 4 to 5 minutes.
Serves 4.
