    12 5" wonton wrappers
    4 cups vegetable oil
    1 red bell pepper, sliced thin
    1 onion, sliced thin
    1 tbsp Chipotle peppers in abobo, minced
    1 tsp groud cumin
    1 tsp kosher salt
    1/2 tbsp black pepper, fresh ground
    2 cloves garlic, minced
    1 tsp chili powder
    1 cup cut corn
    1/4 cup cilantro, freshly chopped
    1 cup Monterey Jack cheese
    1 15 oz. can black beans, drained and rinsed
    1 egg, beaten

    Recipe



    Heat the vegetable oil in a large stock pot or heavy bottom sauce pot. In a separate pan, saute the peppers and onions until soft. Remove from heat and cool slightly, add remaining ingredients.
    Arrange a wrapper in a diamond shape in front of you. Brush with the beaten egg. Place a 1/4 cup of filling in the center of the wrapper. Fold up the bottom corner, then sides, then roll up tight. Repeat with remaining filling and wrappers. Place springrolls carefully in hot oil and fry for 3-4 minutes, until heated through. Serve with your favorite salsa and sour cream.
