6 slabs of baby back ribs, or eight lbs of country style ribs
Large roasting pan
Beer or two bottles apple juice
Selection of spices, garlic, sage, red pepper, salt, black pepper, ginger…etc
A foil pan for the grill
A large grill, and good quality charcoal Recipe
Use the spices, and rub a combination of them into the meat. There is no right or wrong combination. it is a matter of your tastes.
Put the ribs into the roasting pan, and pour in one bottle of apple juice, or an equivelent amount of beer. Using apple juice here will give them a sweeter flavor.
Put the lid on the pan, and put it into the oven at 250 degrees for a couple of hours, and they start turning grey.
Take them out of the oven at this point, and take them to the tailgate party for final cooking.
Set the grill up so that you have an indirect heat. This is done easily on a weber, or hasty bake grill by putting the foil pan directly under the center of the cooking grill, and build you fire around the outside of the pan. Fire directly under the ribs tends to burn them, and cause more flare ups.
Fill the pan with the other bottle of apple juice when the charcoal is ready. Put your ribs on the grill, making sure that they stay moist by sprinkling beer, or more apple juice on them, and keep them turned at regular intervals. You may also want to sprinkle more of your spices on during this as well. I usually have a shaker with my combination of spices all mixed together for this purpose.
About a half hour before you think they are done, start basting them with your favorite sauce, not to heavy, just enough to coat both sides evenly.
When they are done, cut up the slabs, grab a beer, and enjoy your creation before watching everyones favorite team play the game we all love.
