    Tailgate Tuna Vermouth

    ½ cup dry vermouth

    ¼ teaspoon aromatic bitters

    4 large sprigs tarragon

    1 ½ pounds Tuna (1 to 1 ½ inch thick)

    Olive Oil

    1 ½ teaspoons fresh tarragon leaves


    Recipe



    1.) Mix Vermouth and bitters in shallow non-metal dish. Add 2 sprigs tarragon. Ass fish, turning to coat with marinade. Top fish with remaining 2 sprigs tarragon. Cover and let stand, turning once, at least 15 minutes but no longer than 30 minutes.

    2.) Brush grill with vegetable oil or olive oil. Heat coals or gas grill for direct heat.

    3.) Drain fish; discard marinate except for the tarragon sprigs. Place tarragon sprigs directly on hot coals. Immediately cover and grill fish 4 inches from medium heat 10 to 15 minutes, turning once, until fish flakes easily with fork.

    4.) Remove fish to platter. Sprinkle wit chopped tarragon.
