your favorite vinagarette
10 inch round loaf whole-grain bread
1 each red and yellow pepper
1 eggplant
1 onion
10 slices deli cheese
10 slices deli meat (if desired)
10 tomato slices
20 spinach leaves, or Romaine lettuceRecipe
Lightly brown eggplant slices, onion circles, and pepper circles, in olive oil in hot skillet. Cut bread in half horizontally, scoop out some of the insides. Drizzle both inside halves with the vinagarette. Layer meat and cheese, tomato slices, eggplant, onions, and peppers. Top with fresh spinach. Cut into wedges and serve.
