"MN Vikings" Fried Plantain and Spinach

List of Ingredients
1 Large plantain
1 Tbsp. Butter
1 Tbsp. oil
4 scallions chopped
8 oz. small spinach leaves
Nutmeg to taste
Salt and pepper
Red chili slices for garnish
Recipe
Cut off the ends of the plantain. Remove skin and cut plantain into cubes.
In a skillet, heat butter and oil together. Add plantain cubes and fry for 3-4 minutes, turning frequently, until golden brown. Add scallions and cook for 1 more minute.
Add spinach and cook for 1 minute until wilted. Sprinkle with nutmeg and seasoning. Garnish with slices of red chili.
