Baked Feta & Bacon Brussel Sprouts

1 lb fresh Brussel sprouts
1/3 lb bacon
1/4 cup feta or blue cheese
SaltRecipe
Parboil sprouts until slightly tender
Drain and cool
Hollow out core enough to put a piece of cheese in but not enough to cause the sprouts to fall apart
Drain upside down on a paper towel
Stuff a piece of Feta or blue cheese in hollow
Trim bacon to get a lot of the fat off
Wrap a piece of bacon around sprout until it just overlaps and secure with toothpick
Bake at 400o for 30 min
Right out of the oven sprinkle with a little salt.
