    List of Ingredients




    8 ounces butter

    16 ounces (2 cups) half and half

    1 tablespoon horseradish

    5 shallots

    5 cloves garlic

    1 leek, washed and diced

    1 pound parsnips, peeled and diced

    5 pounds Yukon Gold potatoes, small

    1 tablespoon salt

    1/2 tablespoon black pepper

    3 quarts water

    Recipe



    Cook potatoes, leeks, garlic, parsnips and shallots in salted water until fork tender.

    Heat remaining ingredients in separate pan over low heat.

    Strain potatoes when cooked, mash to desired consistency.

    Add remaining warmed ingredients and stir.

    Adjust seasoning. Makes six pounds.
