Cauliflower with Cheese Sauce

1 head cauliflower
4 tablespoons butter
4 tablespoons all-purpose flour
2 cups half and half
1 1/2 cups grated cheddar cheese
1/2 teaspoon salt
Recipe
Place cauliflower in large pot, cover with cold water, and bring to boil. Cook at a gentle boil until just fork tender.
Meanwhile, in a medium saucepan, melt butter. When melted, stir in flour. Add half and half gradually, stirring until thickened.
Still stirring, add cheese and salt. Stir over heat until cheese melts.
Place cauliflower on a platter; pour over cheese sauce, covering whole head. Serve immediately.
Serves 6 to 8.
