Chicago Sweet Potatoes

6 sweet potatoe, peeled and cut into 1/4 inch slices (He calls for a Red Garnet medium size potato, I think it would be safe to substitute any sweet potato though. I usually get the Puerto Rican Red potato.)
1/2 cup water
5 cups white sugar
1 stick butter
Recipe
Rinse the potato slices, and drain. Place in a 2 quart covered saucepan, add the water, sugar and butter.
Cover and simmer until very tender, about 30 minutes. Do not stir during the cooking process.
