Drunken Cabbage

1/2 lb. smoked bacon diced
1 large yellow onion, peeled and thinly sliced
1 medium head green cabbage
2 tablespoons whole caraway seeds
3 tablespoons coarse ground Mustard
12 oz. wheat beer (Nelson used Tyranena's Hefeweizen)
2 Tbls. sugar
1/4 - 1/2 tsp. Tabasco sauce (to taste)
Salt & Pepper to taste Recipe
In a large saucepan cook the bacon over low heat. Add the onions and sweat
for 2 minutes. Add remaining ingredients and season. Cook until cabbage is
tender, about 30 minutes.
Serve this hot or cold as a side for chicken or pork.
