Festive Bacon Mashed Potatoes

List of Ingredients
3 lbs. Russet Potatoes peeled and halved
1/2 cup Farmer John® Bacon cooked and crumbled
2 tsp. fresh Garlic minced
5 Tbs. heavy Whipping Cream
1/2 stick Unsalted Butter
1/4 cup fresh Chives chopped
freshly ground Black Pepper and Salt to Taste
1 cup Fontina Cheese shredded
Recipe
1: Place the potatoes in a large saucepan, cover with cold water and bring to a boil. Reduce heat to simmer and cook for 20-25 minutes or until tender.
2: Drain the potatoes and return them to the saucepan. Shake over medium heat about 10-15 seconds to remove the excess moisture. Place the potatoes through a ricer (or food mill)* and return to the saucepan.
3: In a small saucepan over medium heat, combine the garlic, cream and butter. Heat through just until the butter has melted. Pour mixture into the potatoes.
4: Add the bacon, chives, salt and pepper. Mix thoroughly until smooth and creamy.
5: Top with fontina cheese, Serve immediately
Serves 6.
