Maple and Vinegar Glazed Parsnips

2 pounds parsnips, peeled and cut into equal sizes
2 tablespoons canola oil
1 teaspoon salt
1/2 cup water
2 tablespoons maple syrup
2 tablespoons balsamic vinegar
1 tablespoon cider vinegar
Freshly ground black pepper
Fresh lemon juice (optional)
Recipe
Preheat oven to 400 degrees.
Prepare parsnips, tossing them in bowl with oil and salt to coat well. Place in roasting pan, add water to pan and roast in preheated oven until tender, checking every 10 minutes. This may take 30 to 60 minutes. When fork-tender, drizzle with maple syrup and vinegars. Return to oven and roast until brown and glazed, about 10 minutes longer. Taste, adjust seasonings, adding pepper to taste and, if parsnips are two sweet, a bit of lemon juice. Makes 6 servings.
