Mushrooms in Cream Sauce

1 pound mushrooms
3 tablespoons butter
Salt
Freshly ground pepper
1/4 teaspoon ground mace
2 tablespoons flour
1/3 cup dry sherry
2/3 cup heavy cream
1 egg yolk

Wash and trim mushrooms; if very large, cut into halves or quarters. Place in a saucepan with 2 tablespoons of the butter. Simmer covered for about 10 minutes. Season with salt, pepper, and mace. Stir in the flour and mix well. Stir in the sherry. Cook, stirring constantly, for about 2 to 3 minutes. Beat together the cream and egg yolk. Remove saucepan from heat and stir in the cream mixture. Return to heat and heat through, but do not boil. Stir in the remaining tablespoon of butter. Serve hot over buttered toast fingers as a first course. Serves 4.
