    Parsnips in Maple & Mustard

    2 tablespoons pure maple syrup
    2 teaspoon Dijon-style mustard
    2 tablespoons unsalted butter; cut into bits
    1/2 pound parsnips

    Peel parsnips and cut them into sticks about 3 inches by 1/4 inch. (Or slice them thinly.) In a microwave-safe bowl combine the syrup, mustard, and butter. Add the parsnips, and toss them to coat them well. Microwave the parsnips, covered partially, at high power (100%) for 10 minutes, or until they are tender. The recipe doubles and triples easily, but you will probably have to cook the parsnips longer.

    Serves 2.
