    2-3 T. olive oil
    1 medium onion, sliced
    3-4 potatoes, Idaho type, peeled and cubed
    1 medium tomato, diced
    1 14.5 oz. can beef broth

    Recipe



    Heat the oil in a heavy gauge pan. Add the onion and saute over a high flame to lightly brown them. Add the potatoes and toss. Add the tomato and the broth, season to taste with seasoned salt and pepper, cover and cook for 10 minutes on a simmer. Then, remove the cover, taste and adjust the seasonings and then cook, uncovered, until the dish reaches the consistency you desire. Cooking for 45 minutes to an hour, on a low simmer, reduces the broth and thickens the dish. Serve with a sprinkle of chopped parsley.

    Serves 2-4.

    HINTS:
    This is prefect with any meat, fish or chicken entree.
