    12oz of your favorite stout; or possibly porter
    1 tsp salt
    2 cups water
    1/4 lb double smoked bacon, cubed
    1lb collard greens

    Recipe



    Clean bunched greens and chop them about four times discarding the very bottom of the stems. Combine water, salt, cubed bacon, and beer in pot large enough to accommodate greens and liquid. Bring liquid to a boil and add greens. Reduce to a simmer and cook covered for about 1.25 hours mixing occasionally. Liquid may not cover contents at first, but as the vegetable steams it was collapse into the liquid. Serve with slotted spoon with or without bacon.
