4 pounds red bliss potatoes, unpeeled
8 tablespoons (1 stick) unsalted butter
8-ounce container sour cream
2/3 cup half-and-half (more or less to achieve desired texture)
3/4 tablespoon garlic powder
1 1/2 teaspoons onion powder
1 3/4 teaspoons dried parsley
3/4 tablespoon salt or to taste

Wash potatoes and cut into 1Ž2-inch pieces. Place in a pot and cover
with cold water. Bring to a boil and cook until potatoes are soft.
Add the rest of the ingredients and mash until well mixed and free of lumps.
Note: This recipe makes enough to feed a large family, so adjust it
to fit your needs.
