Uncle Ray's Marinated Beets

List of Ingredients
# 2 bunches, small, fresh beets
# 2 cups white wine vinegar
# 1 cup water
# 1/2 cup sugar
# 1 Tbsp coriander seeds
# 2 Tbsp orange rind strips / zest
# 2 Tbsp dill springs, choppedRecipe
Roast beets in foil in 400F over for one hour or so, depending on size. Let cool. Peel.
Put vinegar, water, coriander seeds and orange zest into non-reactive saucepan. Bring to boil. Add sugar and stir in. Set aside.
Add beets and dill and let mixture cool. Store beets in marinade in sterilized jars in fridge.
Optional: Fresh cilantro, as a garnish.
