    1 block Tempeh
    2 Tbls. olive oil
    4 Cloves Garlic
    1 cup water
    1/4 cup Tamari
    1 cup uncooked spinach
    1 tbls. Dijon mustard
    1tbls. Mayonaise
    1 cup Sauerkraut

    Recipe



    For Marinade:
    1. Coat small baking pan (at least 1 inch deep) with olive oil
    2. Add garlic, tamari and water.
    3. Wisk well. 4. Cut tempeh in half. then in half (diagonally). filet the triangle halves so that slices are thinner. you should end up with 8 triangles. add tempeh to marinade and bake at 350 for 20 minutes. remove from over.

    To make Sandwich:
    Warm sauerkraut.
    Layer all ingredients on toasted bread, cut in half and serve.
    Makes 4 sandwiches
