Scrambled Tofu with Herbs and Cheese

1 tablespoon olive or safflower oil
2 teaspoons butter
20 ounces packaged silken tofu (2 10-ounce packages)
2 tablespoons chopped parsley
2 tablespoons chopped tarragon or basil or marjoram
2 tablespoons finely sliced scallion
1/2 cup grated Cheddar, Muenster, goat, or soy cheese, or feta
Salt and freshly milled pepper

Recipe
Heat the oil and butter and, when hot, crumble the tofu into the pan. Cook over high heat, stirring frequently, until it begins to look firm, after several minutes. Add the herbs and cheese, taste and season with salt, then season with pepper. Serve with a dash of paprika over the top.
Serves 4.
