2- 12.3 oz. cartons of Mori Nu® Extra Firm Silken Tofu, cut into 1/2 inch thick steaks
1 cup tomato salsa
1 cup tomato juice
¼ cup chopped fresh cilantro
½ cup yellow tortilla chips, crushed
½ cup blue corn chips, crushed
1 teaspoon paprika
½ red bell pepper, very thinly sliced
½ green bell pepper, very thinly sliced
1 small tomato, very thinly sliced
½ red onion, very thinly sliced
Recipe
Mix salsa, tomato juice and cilantro together. Pour a small amount on the bottom an ovenproof 9 inch square pan.
Arrange tofu slices over sauce; pour remainder of sauce over surface.
Arrange thinly sliced vegetables over the tofu. Scatter crushed tortilla chips over top; sprinkle with paprika. Bake for 30 minutes until crust is crispy and tofu is heated through.
Serves 6.
