List of Ingredients
2 tablespoons olive oil
8 ounces Gimme Lean sausage, shaped into ½-inch balls
1 onion, chopped
1 pound ripe, flavorful, meaty tomatoes, such as Romas
4 tablespoons chopped fresh cilantro, plus leaves for garnish
2 tablespoons chopped fresh parsley
½ teaspoon turmeric
½ teaspoon ground cinnamon, plus extra to serve on side
¼ cup red lentils
½ cup canned chickpeas, drained and rinsed
2½ cups water
Salt and black pepper
4 small shallots (or whole pearl onions), peeled
¼ cup uncooked soup noodles (or spaghetti broken into 2-inch pieces)

Heat olive oil in a large saucepan. Add the Gimme Lean sausage and the chopped onion, and saute for about 5 minutes, stirring, until onion is softened and translucent.
Rinse the lentils under running water and pick over, discarding any small stones or warped lentils. Add lentils and chickpeas to the saucepan, and add the water. Season to taste with salt and pepper, bring to a boil, reduce heat, cover, and simmer an hour.
Add shallots, and simmer an additional 20 minutes. Add the noodles 5 minutes or so before serving. Serve when noodles are tender. Garnish with cilantro leaves, and serve with lemon wedges and ground cinnamon on the side.
