List of Ingredients
1 package (5 pounds) frozen chicken wings, thawed
4 cloves garlic, minced
3 tablespoons seasoned salt
1 1/2 teaspoons black pepper
1/4 cup plus 1 tablespoon butter, melted and divided
1 large onion, diced
1 1/4 cups honey, divided
3/4 cup ketchup
1/2 cup rice vinegar
1 tablespoon lemon juice
1 tablespoon chili powder
2 teaspoons ground cumin
1/3 cup crunchy peanut butter
1/2 cup hot pepper sauce
Recipe
In a large bowl, combine the wings, garlic, seasoned salt, and black pepper; toss until well coated. Cover and chill for 1 hour. Preheat the oven to 475 degrees F. Coat 2 rimmed baking sheets with nonstick cooking spray. Place the wings on the baking sheets in a single layer. Bake for 15 minutes, turn the wings over, and bake for 15 to 20 minutes more, or until crisp and no pink remains.
Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the onion and sauté for 10 to 12 minutes, or until golden. Add 1 cup honey, the ketchup, vinegar, lemon juice, chili powder, and cumin. Cook for 8 to 10 minutes or until thickened, stirring occasionally. Add the peanut butter; mix well and set aside. In a large bowl, combine the remaining 1/4 cup butter and 1/4 cup honey and the hot pepper sauce. Add the cooked wings and toss to coat well. Serve with the peanut butter sauce on the side for dipping.
