Spicy Chicken Wings

..with Tangy Blue Cheese Dressing
List of Ingredients
2 Dozen Chicken wings
Seasoned flour (*see recipe below)
Hot sauce (*see recipe below)
Blue cheese dressing (*see recipe below)
Celery sticks
Carrots sticks
*To prepare the fried chicken wings
Ingredients:
2 Cups Flour
1 Tablespoon Salt
2 Teaspoons Black pepper
Recipe
Combine the flour, salt and black pepper in a bowl.
Toss the chicken wings in the seasoned flour mixture.
Let sit for 10 minutes.
Deep fry the chicken wings in vegetable oil at 325 degrees for approximately 8 minutes, or until the wings float.
*Please note: when frying the chicken wings, use a candy or oil thermometer to monitor the temperature of the oil.
***For a healthier alternative - baked chicken wings:
Ingredients:
2 Dozen Chicken wings
Salt and pepper - To taste
Season the chicken wings with salt and pepper.
Bake the chicken wings at 450 degrees for 10 - 15 minutes, or until done.
*For the hot sauce
Ingredients:
2 Cups Durkees Hot Sauce
1 Stick Butter or margarine
¼ Cup White vinegar
2 Tablespoons Honey
Combine the ingredients in a saucepan and bring to a simmer.
Set aside until you are ready to sauce the wings.
*For the blue cheese dressing:
Ingredients:
1 Cup Mayonnaise
1 Cup Sour cream
½ Cup Apple cider vinegar
1 Cup Crumbled blue cheese
Salt and pepper - To taste
2 Teaspoons Worcestershire sauce
2 Cloves Minced garlic
Mix all of the ingredients together, except for the blue cheese.
Fold in the crumbled blue cheese.
Season with salt and pepper to taste.
Refrigerate the mixture. The blue cheese dressing can be made up to 2 days in advance.
Preparation of the spicy chicken wings:
Place the chicken wings on a plate or in a bowl.
Place the blue cheese dressing in a decorative bowl.
Garnish with the celery sticks and carrot sticks.
ADDITIONAL SAUCE
For Szechwan glazed chicken wings
Ingredients:
1 Cup Soy sauce
1 Tablespoon Fresh ginger - chopped
¼ Cup Light corn syrup
¼ Cup Rice wine vinegar
2 Teaspoons Chili flakes
½ Cup Pineapple juice
½ Tablespoon Corn starch
Heat all of the ingredients (except for cornstarch) in a saucepan and bring to a boil.
Combine corn starch and 1 tablespoon cold water to create a paste.
Add cornstarch paste to sauce pan.
