Sweet Chilli Chicken Wings

8 medium sized chicken wings
4 coriander stalks and roots
3 garlic cloves
1 small red or green chilli
1 tsp sea salt
1 tsp sugar
2 tbsp Thai fish sauce
2 tbsp lime juice
2 tbsp vegetable oil
Dipping sauce
150ml sweet chilli sauce
2 tbsp lime juice
1 small red or green chilli, finely sliced
Recipe
Cut off the tip of the wings, and bend each wing until you can cut cleanly between the joints.
Roughly chop the coriander stalks and roots and pound with the garlic, chilli, salt and sugar until you have a rough paste, or use the food processor. Add the fish sauce, lime juice and vegetable oil, and stir well. Rub this marinade all over the chicken pieces, and leave to marinate for an hour or two, or even overnight, in the refrigerator, turning once or twice.
To cook, return the chicken to room temperature. Either grill on a medium-heat barbecue for around 15 minutes, turning once, or cook in an oven heated to 220ºC/425ºF for 30 minutes or until crisp and golden.
Mix the sweet chilli sauce and fresh lime juice to taste. Stir in the finely sliced chilli and serve as a dipping sauce.
