    List of Ingredients




    • 2 cups frozen corn
    • 1/2 cup black beans
    • 2 tablespoons olive oil
    • 2 tablespoons diced red pepper
    • 1 garlic clove
    • 1 small jalapeño pepper
    • 1 tablespoon fresh, chopped cilantro
    • 1 tablespoon fresh lime juice or cider vinegar
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground cumin
    • 1/8 teaspoon black pepper
    • 1 tablespoon fresh parsley

    Recipe



    COMBINE corn, black beans and remaining ingredients in medium size bowl, except fresh parsley and cilantro. (Salsa can be made 1 day ahead.)


    COVER and refrigerate.


    BRING to room temperature before serving and add freshly chopped parsley and cilantro.


    SERVE as relish with grilled chicken or pork, or with baked tortilla chips.
