8 flour tortillas
1 cup shredded Monterey Jack cheese
4 tablespoons chopped fresh cilantro
Salsa (optional)
Sour cream, for garnish
Fresh cilantro sprigs, for garnish
Recipe
1. Heat grill. Sprinkle each of four flour tortillas with 1/4 cup of the shredded cheese and 1 tablespoon of the chopped cilantro. Cover with remaining tortillas.
2. Grill over medium-hot* coals for 30 to 60 seconds per side or until golden. Spoon salsa between tortillas, if desired. Cut into wedges and garnish with sour cream and cilantro, if desired. Makes 4 servings.
*Note: To test for medium-hot heat, you should be able to hold your hand over the coals at the height of the food for 3 seconds before you have to pull away
