    Cheddar Peanut Butter Corn Bread Wedges

    1 and 1/2 cups all-purpose flour


    • 1/2 cup cornmeal


    • 1/2 cup granulated sugar


    • 2 teaspoon baking powder


    • 1/2 teaspoon salt


    • 1 cup Jif Creamy Peanut Butter


    • 1 cup buttermilk


    • 1/2 cup Crisco® Canola Oil


    • 1 large egg, beaten


    • 1 cup shredded cheddar cheese


    Recipe



    Heat the oven to 375ºF.


    • Combine the flour, cornmeal, sugar, baking powder and salt in a large bowl. Mix well.


    • In a medium bowl, whisk together the Jif Creamy Peanut Butter, buttermilk, Crisco® Canola Oil, and egg. Mix well.


    • Pour the wet mixture into the bowl with the dry ingredients and stir until well combined.


    • Add the cheddar cheese and stir until just combined. Do not over mix.


    • Spray a 9 inch pie pan with Crisco® Cooking Spray and fill with the mixture.


    • Bake about 25 minutes until golden brown and a toothpick or cake tester comes out clean when inserted into the center.


    • Remove from the oven and place on a cooling rack.


    • When cool enough to serve, cut into 8 wedges.


    • Serve warm or at room temperature.


    • Makes 8 wedges.
