1/3 cup soy flour
1/3 cup soy Protein Isolate
2 large eggs
1/2 tsp baking powder
2 tbsp low fat sour cream
2 tbsp olive oil
1/2 cup grated low fat cheddar cheese
2 tsp oregano
Recipe
Preheat oven to 375
Combine the soy flour, soy protein, eggs, baking powder, sour cream and oil in a bowl and mix well. Fold in half the cheddar.
Pour batter into a well greased loaf pan and sprinkle remaining cheddar cheese on top.
Bake 25 minutes.
Serve immediately or store in fridge for 2 days or freezer for one month. Consistent with texture of a biscuit, if you desire a more bread like texture, substitute low fat cottage cheese and play around with the herbs trying something different than oregano if you wish.
*Can sustitute whey protein in place of the soy protein instead.
