BREAD
1 C. whole-wheat flour
1 C. unbleached all-purpose flour
3/4 C. sugar
4 t. baking powder
2 t. ground cinnamon
1/2 t. salt
1 C. milk
3 T. canola oil
1 T. vanilla extract
1 egg plus 2 egg whites
STREUSEL
2 T. brown sugar
1 1/2 t. ground cinnamon
2 t. butter, softened
Recipe
Preheat the oven to 350 F. Spray a 9-by-5-inch loaf pan with nonstick cooking spray and set aside.
In a large bowl, place the flour, sugar, baking powder, cinnamon, salt, milk, oil, vanilla and eggs. Beat with an electric mixer for 2 minutes at medium speed. Pour the batter into the prepared pan.
In a small bowl, combine the streusel ingredients and mix until crumbly. Sprinkle over the batter and swirl slightly to marble. Bake for about 55 minutes, or until a sharp knife inserted in the center comes out clean. Cool for 10 minutes in the pan on a wire rack, then remove from the pan to finish cooling on the rack.
Makes 1 loaf (16 slices).
